Marinated Chicken Drumsticks Cooked from Frozen

My youngest & I woke up today feeling less than energetic.  As dinner time rolled around I realized “I need a quick dinner!”  I had nothing but frozen chicken legs to produce a meal with… and 1 hour.  A quick search turned up this little delight from Jodi over at KnowGluten.com and voila! A three course dinner in 1 hour (only about 20 minutes of which I was actively preparing it) which included all of the Big 3 (Omega-3’s, Protein & Live Foods).

Ingredients:

  • 8 drumsticks (or 2 per person)
  • 1/4 cup olive oil
  • 1/4 cup bbq sauce (I used a mix of a couple we had on hand –recipes for my favorite paleos are here)
  • 2 tsp ground coriander seed (I left this out since I didn’t have any)
  • 1/2 T salt

Directions:

  1. Combine everything in a ziplock bag and massage until chicken is coated.
  2. If desired, marinate in bag for at least 10 minutes.
  3. Place drumsticks in an open baking dish
  4. Cook uncovered at 375 until chicken skin is crispy and meat pulls away from the bone. About 45 mins for fresh and 60 mins for frozen.

I rubbed a potato for each family member in olive oil & pink salt and put them in at the same time as the legs.  Both were ready at the same time.  We had our protein (chicken legs) so I chopped some spinach & lettuce, grated a carrot (live food) & topped it with flax/chia meal (Omega-3’s), live sauerkraut & homemade ranch dressing (probiotics) and then went to wrap Christmas gifts till my timer rang.  There was our Big 3, three course meal, hot & ready to plate!  LOVE.
