Cheater Thai Stir-Fry | Nourishing Nuggets

Looking for a unique flavored stir-fry that you can whip up in a few minutes with items Americans have on hand?  The search is over!  I’m pretty glad, because I LOVE Asian foods but have had a tough time finding a healthy & quick recipe that ALL the members of the family enjoy, and can be made without special ingredients.  Since we don’t agree on loving the genre, I don’t go out of my way to purchase odd seasonings.  This did it though!  Bam.  Unique, quick, healthy, easy!  And, it includes all of the Big 3’s (Protein, Omega-3’s & Live Foods)!

Cheater Thai Stir-Fry

  • 2 tablespoons soy sauce (I used Braggs Coconut Aminos)
  • tablespoon brown sugar (I used rapadura)
  • 2 teaspoons garlic powder (I used minced garlic)
  • 2 teaspoons peanut butter
  • 1 tsp prepared mustard
  • 1 lb ground beef (I used ground bison since it’s what I had on hand)
  • 2 teaspoons olive oil (I also added roasted peanut oil for a more nutty flavor)
  • 1 (16 ounce) package frozen mixed vegetables 
  • Flax & Chia meal to sprinkle at the table

I found the base recipe here.  This is how easy it was: First, I started some rice cooking using homemade chicken broth instead of water for extra nutrients & flavor.  Then I browned the ground bison, stirred in the aminos, rapadura, garlic, PB & mustard.  I set that aside & sautéed the veggies in the oils.  Threw the meat in with the veggies.  Voila! Done.  I plated the rice beside the Stir-Fry & sprinkled on some flax/Chia meal for omega-3’s and dinner was served.  It look less than an hour and I had a full visit with the neighbor while it was cooking.  Everyone loved it & requested it be made again.  Happy mama!
