Magnificent Menus | January

Here is a yummy Winter Menu including our Big 3s (Omega-3s, Protein & Live Foods) in most meals & snacks.  This 1-2-3 punch has been the easiest guide for the kids get into, so much so that they even ask me what we will be having for each of the 3 categories before meals.  Three small things are so easy to remember!  We strive to move away from grains & dairy as much as possible & toward raw, though we aren’t super strict about it; and we loosely adhere to a Weston A. Price philosophy.  Here’s what this week looks like:

Dinners

All Day Ham Red Beans over Rice  I used bone broth instead of plain water & then took some of that juice to cook the rice in.  It was still very watery so I added 1/2 cup of VERY fine flax meal to thicken it and served it with cheese to balance the slick feeling that much flax creates.  No one noticed all that extra Omega 3!  I will do a Cauliflower Rice next time.  This makes enough for us to freeze & have in a couple of weeks, always a plus in my book.


Pastaless Pasta with Salad dressed in Lime Scented Flax Oil Dressing & Roasted Winter Squash (more Omega-3’s)


Beef Chili (w/Hidden Liver)  w/Flax Biscuits & Brussel Sprouts


Crock Pot Chicken Soup  w/Flax Biscuits again.


Rice & Bean Burrito Bowls  w/Cauliflower Mexican Rice

Lunches

Grilled Cheese on Coconut Flour Flatbread & Tomato Soup


PB&J sprinkled w/flax, served with carrots


Chicken Pieces (from the chicken soup night), Cucumber Salad (Cukes, Lemon Juice, Salt & Cayenne) & flax meal yogurt


Healthier Corn Dogs & lettuce leaves  (LOVE these, though for our family, I’m working on subbing some of the flour out for coconut flour-just remember to always increase the liquid by the same measure of coconut flour you sub in, i.e. 1/2 cup coconut flour + 1/2 cup extra liquid goes in instead of 1/2 cup of the regular flour.  The kids love them, we can grab them to go in a pinch and eat them at friends’ houses or on the road and even with flour are a MUCH better option than fast food!)

Snacks

All Fruit Popcicles  -These have been great for the lingering sore throats of the winter season.


Omega 3 Bars  -these are super yummy and packed with nutrition!


Raw Chocolate Cake -Yum!  Always love the recipes from Jon Gabriel who is the one who started us on this whole Big 3 journey in the first place.
