Grain & Gluten free, Big 3 & Kid Approved, Probiotics Included!
1 cup precooked chicken salted to taste
1-2 tbsp olive oil mayo
1 tsp mustard
1 tsp finely chopped onion
2 tbs finely chopped live sauerkraut
2 tsp ground chia &/or flax seeds
1 avocado sliced
Mix first 6 ingredients together. Scoop into lettuce leaves, top with avocado, wrap up and enjoy!
Make extra and have on hand in the fridge for quick lunches throughout the week.
In our plight to cut down irritants of Juvenile Arthritis, I’ve been missing the grab & go lunches we’ve always depended on PB&J’s to provide us. Discovered this today to fill some of the gap. Kids & Parents BOTH liked them Yay! It has all of the Big 3 (Protein, Live Food & Omega 3s), tastes awesome and, served with almond milk for our calcium, it’s the perfect meal for our family.
The only prep is to cook the chicken which took no extra work for me, as I threw some chicken legs & thighs into my perpetual broth crockpot for a couple hours the night before till they were cooked through.
