Idaho Sunrise: Bacon & Eggs Stuffed into a Potato Bowl, Anyone?

IDAHO SUNRISE

A simple recipe for Idaho Sunrise, baked eggs, bacon and cheese in potato bowls. Ready in under 30 minutes for a nice, hearty breakfast.

These are, not only our dinner tonight but will also grace our freezer for an “instant” healthy treat on the run.  Idaho Sunrise baked potato bowls cook in 20 minutes and taste great.  We love all the fresh eggs our hens have been laying with the longer days and are always looking to add their little jewels to our meals.  This is our linner tonight (too late for lunch since we made a week’s worth of pancakes for brunch, and too early for dinner) because I haven’t shopped yet and had a bunch of potatoes with little roots sprouting.

I make 6-12 at a time without the egg and pop them in the freezer.  Thaw, add the egg & bake a quick meal another day!

Many thanks to Farah over at The Cooking Jar for the base recipe, all the facts and the delicious pictures!  I, of course, added the flax to them for extra omega 3’s.  I’ll be serving these with a green Italian salad for our live food and we’re in business.  Yum!

INGREDIENTS

  • 2 large russet potatoes, baked
  • 1 tablespoon butter, divided
  • 2 eggs
  • Salt and pepper to taste
  • 3 bacon strips, chopped
  • 4 tablespoons cheddar cheese, shredded
  • 1 teaspoon ground flax (optional)
  • 2 tablespoons fresh parsley, chopped
INSTRUCTIONS
  1. Lay the baked potato on its side and slice off the top third of the potato
  2. Hollow out the potato with a spoon to make a bowl
  3. Add ½ tablespoon of butter to each potato bowl and follow with some shredded cheese & the flax
  4. Gently break an egg into each bowl (my kiddos like a scrambled look, so I wisk gently)
  5. Season with salt and pepper to taste
  6. Top with bacon bits, cheese and parsley. (Save some cheese, bacon and parsley for the potato filling and eat later… or with;)
  7. Bake at 350 degrees F for 20-25 minutes or until the egg whites are set
  8. Top with a little extra cheese and pop back in to melt for extra scrumptiness.
  9. Dish and serve hot.
Note: The nutrition facts do not contain the flax addition.
