1 large egg
1 Tbsp coconut flour
1 Tbsp parmesan cheese (optional, but a great source of absorbable calcium for bones and teeth)
1/8 tsp baking soda
1/8 tsp baking powder
2 pinches of sea salt and/or any herbs you want (I do salt, basil & oregano)
2 Tbsp any kind of milk (heavy cream yields the fluffiest “bread”)
1 tsp flax meal
1 tsp water
Make 1 recipe for each person eating.
Mix everything together till lumps disappear. Wait a bit for the coconut flour to thicken then pour into hot buttered pan and fry like pancakes.
I add sliced ham & cheese after flipping them so it melts while the other side cooks. My kids accepted them as “grilled cheese” and stuffed them down with smiles on, once I added ketchup for them to dip in (because they could taste the egginess, and they always eat eggs with ketchup).

I’m going to make this ahead without the salt & herbs and chill it to have on hand for my youngest son’s addiction to peanut butter and jelly. And, this recipe is included in our Winter Menu Plan.
